The introduction details the adverse effects of animal agriculture and climate change on the planet and urges readers to regard the versatile chickpea as an entry to a healthier, more sustainable diet. The 80 recipes use whole chickpeas, chickpea flour, chickpea pasta, and chickpea cooking liquid (aquafaba) in myriad ways. They include snacks (sweet potato sliders with carrot slaw), mains (mushroom loaf), desserts (chocolate brownies), and beverages (lavender whiskey sour).
