Canadian blogger Lawless and certified culinary nutrition expert Mulqueen team up for this plant-based cookbook, which emphasizes good environmental stewardship. The introduction details the adverse effects of animal agriculture and climate change on the planet and urges readers to regard the versatile chickpea as an entry to a healthier, more sustainable diet. The 80 recipes use whole chickpeas, chickpea flour, chickpea pasta, and chickpea cooking liquid (aquafaba) in myriad ways.
